If the essay is an assignment where the aim is to do your own background research, then familiarising yourself with the topic is obviously part of this stage.
Once you have vomited your brain's content onto the paper, you need to plan the structure of the essay: what you are going to say and in what order. Usually the essay consists of a short introduction, the subject itself (remember the paragraph order!) and finally a short conclusion or summary.
Native language essays or other reflective essays should have one thesis, or main argument, supported by various arguments. In essays demonstrating understanding of reading subjects (e.g. biology or history), it is not necessarily necessary to include a reflection or argument, but the aim is to show the teacher that you have mastered the subject.
The essay assignment usually gives you a good idea of whether the teacher wants the essay to be reflective or not. For example, if you have an hour to write an essay in an exam, you should allow at least 10 minutes for planning. If there are many tasks, some of which are essay questions, I personally start planning my essays at the beginning of the exam.
After a moment of "brainstorming", I leave the essays to "brew" and start working on the other tasks. It often happens that after I have done the other tasks, a few things come to mind that I didn't remember at the beginning. Before writing the essays, I make sure that I have answered all the other tasks.
